And what the rule book means here is leaving Paolo, who runs the grove, to keep up traditional production methods. These include allowing, twice a year, sheep to graze on the grove; they keep the grass down and fertilise the soil the way nature intended. While the sheep get on with keeping the trees well fed, Paolo has time to keep his pruning skills in tip top condition; this year he came third in the Italian national pruning competition.

Autumn: The BEST Olive Oil!
I absolutely LOVE all Nudo olive oils, but the organic extra virgin is my very favorite. I put it on everything, and go through it at an extraordinary rate! Recently, I made olive oil ice cream, and my whole family loved it. The natural fruity flavor of the oil really shined through, and the ice cream was amazingly flavorful.
